  • Vitaly Paley is one of Portland's most celebrated chefs.  He owns several restaurants including his long-standing fine dining restaurant Paley's Place Bistro & Bar and his new Headwaters in the Heathman Hotel. The Imperial features a wood fired grill and rotisserie as the main source of inspiration for the menu.  Located in the Hotel Lucia, The Imperial features awesome cocktails and a great wine list to compliment the bounty of steaks and seafood on the menu.  I think some of his best items are the wood roasted vegetables. The restaurant is open for breakfast, lunch and dinner.  The bar is a really cool scene at night for dinner or even after dinner drinks. I have met some really interesting people there especially the crew from Grimm who stayed in the hotel often.
