Custom Bread. Collaborative Development. Built to Scale.
At Companion Baking, we believe bread should do more than hold the sandwich together.
It can create the first impression at the table. It can transform a familiar menu item into something ownable. It can reinforce a brand’s culinary point of view and, when done well, become something guests associate specifically with you.
That’s why we don’t approach foodservice as simply a bakery selling products. We work directly with culinary teams to develop bread programs around their food, their operations, and their brand.
Founded in St. Louis in 1993, Companion Baking is a specialty bread manufacturer serving multi-unit restaurant and foodservice partners across the country. We combine the craft and curiosity of an artisan bakery with the consistency, food safety, scalability, and distribution capabilities required by growing and national brands.
Built Around the Culinary Team
Some customers come to us with a very specific vision: a particular flavor, texture, shape, size, ingredient profile, or menu application. Others come with a problem to solve.
Maybe an existing bun isn’t performing operationally. Maybe a sandwich needs a carrier that makes it feel more premium. Maybe the culinary team is developing an LTO and wants the bread to be part of the innovation rather than an afterthought. Or maybe a growing concept has outgrown what can be produced consistently at the restaurant level.
Those are the conversations we enjoy most.
Our team works directly with chefs, culinary leaders, procurement teams, and operators through the development process—from initial ideation and bench development through testing, commercialization, production, and distribution.
That collaboration can lead to something as subtle as dialing in the perfect crumb structure for a signature sandwich or as distinctive as developing an entirely proprietary bread around a new menu concept.
The goal isn’t customization for customization’s sake. It’s creating bread that makes the food better and makes sense in the operation.
Clean Label Committed
We believe great bread doesn’t require an unnecessarily complicated ingredient statement.
Companion is committed to clean-label baking and thoughtful formulation, balancing the ingredient expectations of today’s guests with the very real performance requirements of multi-unit foodservice.
That philosophy influences how we formulate, source ingredients, develop products, and approach innovation. We want our partners to feel good not only about how their bread eats, but also about what goes into it.
Better Bread. Better Planet.
Our responsibility extends beyond what comes out of our ovens.
Companion Baking is a proud member of 1% for the Planet, committing a portion of our sales to environmental organizations working to protect the planet and create a more sustainable future.
Sustainability is also something we continue to examine throughout our business—from ingredient sourcing and regenerative agriculture initiatives to waste reduction, energy efficiency, packaging, and the way we operate our bakery.
We know there is always more work to do. Our commitment is to keep moving forward, measuring our impact, and finding meaningful ways to improve.
Let’s Build Something Together
GCIA is built around an idea we strongly believe in: the best culinary innovation happens through collaboration.
We’re proud to support that community as a Patron Sponsor, but even more excited to participate in it.
If you’re working on a new sandwich, rethinking your bread basket, exploring an LTO, improving an existing menu item, or simply wondering “What could we do differently with the bread?”—we’d love to be part of that conversation.
Bring us the menu item. Bring us the operational challenge. Bring us the half-formed idea someone sketched on a napkin.
We’ll bring the bread.
